Living in an old apartment sans air conditioning means we have to get creative with summer meals – turning the stove on is just not an option. This can be a real challenge when you want to eat up all fresh and delicious produce showing up at markets and in stores. A trip to last Saturday’s Etobicoke Civic Centre farmer’s market yielded some new mini potatoes, peas in the pod, raspberries and Strawberry-Rhubarb Pie (we certainly weren’t going to one, so this was a perfect dessert option)
I love potato salad as much as the next girl, but find they’re often just mess of mushy potatoes and mayonnaise. This warm version hit the spot – the peas and lemon keep things tasting fresh, while the bacon adds a hit of saltiness and crunch. A fantastic, easy summertime Sunday supper.
Warm Potato Salad with Peas & Bacon
- Boiled New Baby Potatoes (I used a quart which was just enough for two portions)
- Shelled and steamed peas
- 4 slices cooked bacon
- Sliced Green Onions
- Lemon Vinaigrette (I like the Everyday Food version)
- Grated parmesan cheese
- Salt and pepper to taste
Toss everything in a large bowl to combine and enjoy! Yum!
